Crispy Rolls Stuffed with Fancy Mushrooms


This is a very simple starter for any number of people. It is severed hot but can be prepared earlier in the day. .

1 large crispy round roll per person (individual no joins) (6 for these quantities)
2 cloves garlic
2 tbsp olive oil
1 lb mixed fancy mushrooms: e.g. Oyster, brown,
2oz butter
3oz double cream
salt and pepper and a sprinkle of mixed herbs.

1. Slice the top off of each roll and keep for a lid.
2. Carefully scoop out the middle of each roll and keep.
3. Paint the inside of each roll and lid with olive oil and rub with garlic.
4. Bake the rolls for 5 minutes in a moderate oven.
5. Wash and dry the mushrooms.
6. Lightly fry in butter and add salt, pepper and herbs to taste.
7. Take off the heat and stir in the cream.
8. Fill each roll and put lids on.
9. Serve straight away.

Stellenryck Cabernet Sauvignon 1991

Vina Fuerte, Gamacha DOC Catatayud. 14.5% Alc.

I very rarely recommend a non vintage wine but this full bodied fruity red is certainly an exceptional and exciting find at £3.99. Made solely from Gamacha grape grown in North east Spain, its high alcoholic content is well concealed by an abundance of ripe spicy berry fruit with a touch of oak adding weight. This variety in Spain and in France at where it's called Grenache produces wines high in alcohol which tend to age quickly, so its often blended with other varieties that have greater ageing potential the best known being Chateaneuf-du-pape. Here Garnacha on its own has been made into a quite unique and fruity wine for drinking now. The wine maker Alastair Maling, an International Wine Society consultant has carefully selected fruit from the best vineyards of the area and blended up a quite delightful full fruity wine.
